Easy Pumpkin Chocolate Chip Cookies


These cookies are simple and delicious.  I found this recipe on food.com, but the package sizes didn't match up to what I had.  I ended up making a double batch which worked out well because the cookies get eaten so quickly (plus we like to share with others).  So this is what I used (for a double batch) ~

29 oz. can pumpkin (NOT pumpkin pie filling)
2 boxes spice cake
24 oz. (or around that) of semi-sweet chocolate chip.

Directions:
Pre-heat oven to 350 degrees.
Mix together pumpkin and spice cake until well blended. Add chocolate 
chips to mix. 
Drop cookies on baking sheet. (The source says a greased baking sheet.  I use stoneware and didn't grease mine.  Turned out perfect).  I love to use my mini-scoop for dropping cookies: quick and easy.
Bake for 15-18 minutes.  (15 min. was plenty for my size cookies).
We enjoy eating this a little warm.

It was so nice to get out in the fresh cool Fall air.  We used to do it a lot where we used to live and haven't as much since moving.  We need to do it more.

12of12 October 2011

Oh. My. Goodness! I really can't believe that the year is at its tail end.  Wow!  It has gone by quickly.
I am loving the Fall colors and the thought that Thanksgiving and Christmas are just around the corner.  But before that I have the Artisan Market at Noah's next week {NEXT WEEK} and Halloween and all the festivities along with it.

Taking it one day at a time . . . and here is a glimpse of today.

1.  Miss M creating her own morning music.
2.  Miss A dressed up as Snow White: it was movie character day at school.
3.  Miss M having her 2nd breakfast.  2nd?  What is with my girls.  Miss B has a seconds on a lot of meals and M sometimes.  They don't need that much food, or do they?
4.  Requested photo by Little I.
5.  Hanging out with Lion.
6.  Last coat of wax on this table I'm selling.
7.  Loving the wax finish!
8.  Loving my new crock pot too!  I haven't had one for a few months (the last one fried itself) and I've missed it.  Can't have Fall without a crockpot.
9.  Shoe Bench I finished to sell.
10. Baby is getting big.  She believes she is even big enough to walk around AND drink her milk.
11. Enjoyed watching the moon come over the mountains.  It is amazing how fast it appears and rises.
12. Book Club.  It doesn't look like all are being silly, but believe you me, they can ALL be silly.

1.  Exercising on the treadmill.
2.  Child's Pose.  This used to be a relaxing pose for me.  Now it is very painful because I have Adhesive Capsulitis or Frozen Shoulder.  Though stretching is painful, daily stretching helps lessen the intensity of the numbness and pain in my arms and shoulders. I need to get on a routine again of doing Yoga at least 1x a week.
3.  Baby has been undressing herself to nothing while in her crib.  I guess she is ready to get out and since she can't get out, she will throw everything else overboard.  She has only done it after naps until last night.  I had to put her sister's Feeters on her because all of hers were still in the dryer.  Then I had to put a sweatshirt over that to keep her from wriggling out of the Feeters.
4.  Baby thinks it is a necessity to take her shoes and socks off every time we are in the car.
5.  Filling up the van with Natural Gas.
6.  Miss A loves this outfit with the matching headband.  Sad to say she may have lost it out the window during the car pool today.
7.  Baby requested silverware with her lunch today.  I love her proud face.  Yes!  I'm big now!
8.  Bottling spaghetti sauce.
9.  Little I of course fell asleep on the way home from picking up her sisters at school.
10. In my Master Gardener Class.
11. Book Club.  Tonight we discussed the Hunger Games Trilogy.
12. #10 & #11 were taken with my SD360 because Rob had to use the T2i for filming the youth tonight.
